The question of glassware used in wine tasting often comes up.  While I am fine drinking wine out of pretty much anything, there is no doubt that the glass can make a very big difference in the way a wine will taste.  Years ago I gave 2 Riedel Sommelier glasses (top of the Riedel line) to a friend as a wedding gift.  The couple had registered for the Riedel Vinum series that is not hand made.  They told me that the same wine in the Sommelier glasses was significantly better than in the Vinum glasses.  They had a nice wine selection and testing the glasses with various wines always produced the same results.  They were actually a bit perturbed because, now that they could actually taste the difference, they felt obligated to purchase more Sommelier glasses. </p>
<p>Truth or Myth? Years ago, Riedel introduced a stem less glass specifically for sommeliers and the wine trade.  It was supposed to be the ultimate tasting glass that allowed one to pick up all the nuances of the wine.  A while ago I was at a wine tasting where Riedel had a table.  I inquired about the “tasting” glass and was informed that they no longer made it because it turned out that the glasses were &#8220;too good and it exposed all the flaws of the wine&#8221;.  I never used the glass and I do not know if this was true, but it does show the “power” of the wine glass.</p>

While its beauty and uniqueness is unquestioned, one’s experience while visiting will definitely affect what you think of the city. I have been there a few times over the years; the first time was probably when I was 10 or 11 years old. One thing that always stands out is the sheer number of tourists and pigeons being fed by the tourists. </p>

<p><strong>I love Venice.</strong> I tend to be generally positive and so I do not dwell on the dirty looking water or pigeons that are everywhere. There are 2 ways to visit Venice: stay outside and commute in with the very convenient public transportation or stay in Venice.  The former is obviously much less expensive.  A few years ago I did just that and had a great time.  We spent 3 days visiting every part of the city. I had a great map that had all the streets, some were really just alleys, and really took in all the history and details of the city, like how all the piazzas were also water-collecting devices with the wells in the middle.  The last I visited was in 2009 with my wife, our 1 year old son and a few friends.  It was the first time I stayed in Venice overnight and had a totally different experience.  All the tourists leave around 4 or 5 PM, when the churches and museums close; so we found ourselves walking around this incredible city with only a handful of people.  It was so enjoyable.  The very large Piazza San Marco was practically empty. The evening was even more seductive. The streets (really sidewalks since there are obviously no cars) were almost completely empty; the dim lights and old buildings really transported you back in time.  The next morning, my son woke up early and wanted to run around, so we went to the small piazza, which was a short distance from the hotel.  We had the traditional cappuccino and croissants. My son just had steamed milk with chocolate; he likes his “cappuccino”.  We chased pigeons, time passed quickly and by 8 -9 AM, the streets and cafes started getting busy.  People where walking to work like any other city (except no cars).<br />

I never looked at Venice as a place of business, just as a tourist attraction, but people actually live, work, play, etc. here.  What a place!!</p>

Recently there was an interesting <a href="http://eater.com/archives/2012/04/27/costcos-wine-buyer-doesnt-think-wine-is-different-than-toilet-paper.php">segment</a> by CNBC on Costco and its influence in the wine world.  It seems that Costco has become the biggest seller of wines in the world and the wine buyer thinks that ultimately there is no difference between wine and toilet paper.<br />

I think Costco has done a great job of recognizing and expanding their wine business.  They have also made many good and great wines more affordable and available to all, which really benefits everybody.  I think the main concern of the public and their customers should be their strategy going forward.  Will they continue to be leaders in the field and be able to distinguish the nuances of wine, versus products like toilet paper, or will they lose their status and become followers? </p>
<p>Another <a href="http://www.novacadamatre.com/why-is-wine-different-from-toilet-paper/">wine blogger</a> on the topic says &#8220;While I agree with Alvarez-Peters trying to say wine is just another consumer beverage and everyone should stop acting like it is so special I don’t agree that it is the same as toilet paper or tin foil.&#8221;</p>

Initially the segment was to include his mom as they shared some of their favorite Italian recipes and wine pairings just in time for Mother&#8217;s Day.  Unfortunately his mom, Liliana, was under the weather today and couldn&#8217;t make it in person- she was however there in spirit along with her delicious recipes from the Marche region of Italy. <p><em><strong>Olive Ascolane<br />
(Stuffed Olives of Ascoli Piceno)</em><br />
Paired with:<br />
Angelini Prosecco $10.99 and Fausti Rosso Piceno $10.99</strong></p>
<p><strong>Ingredients:</strong><br />
1.5 lbs Large Green Olives<br />
10 oz lean beef in a 2 pieces<br />
5 oz pork loin in a single piece<br />
5 oz chicken breast in a single piece<br />
3 Tbsp butter<br />
8 oz grated Parmigiano Reggiano<br />
4 eggs<br />
7 oz Fine dried breadcrumbs<br />
4 oz all purpose flour<br />
Extra Virgin Olive Oil<br />
Salt &#038; Pepper</p>
<p><strong>Filling Preparation:</strong><br />
Sauté the meats all together in butter until fully cooked.<br />
Remove from heat and allow to cool.<br />
Pass the cooked meat, chicken and pork through a meat grinder.<br />
In large bowl, combine the ground meat mixture with the Parmigiano Raggiano and 2 eggs<br />
Mix well and set aside.</p>
<p><strong>Olive Preparation:</strong><br />
Peel each olive in a circular fashion (like peeling orange?) to remove the pit.  Preferably one is left with 1 continuous piece.  Don’t worry is the peel breaks; it can still be used to mold the olive into the correct shape.<br />
Stuff the olives so that they have the approximate shape of the initial olive.  This does not have to be exact.  Use the amount of filling that seems appropriate to mold the stuffed olive into its approximate original shape.</p>
<p>Coat each stuffed olive with flour, pass in the 2 remaining beaten eggs and then in the bread crumbs.  Deep fry in abundant hot extra virgin olive oil.  One can also use a shallow pan, just make sure the olives are totally covered by the olive oil.  Remove with slotted spoon when golden brown and place on paper towels to drain.  Serve hot and traditionally one should use your hands, no utensils.</p>

<p><strong>Passatelli  con Porcini</strong><em></p>
<p>Ingredients for 4 people:<br />
Paired with:<br />
Palagetto Vernaccia $12.99, Angelini Estate Sangiovese $16.99</p>
<p><strong>For Passatelli:</strong><br />
4 eggs<br />
2 oz flour<br />
6 oz grated Parmigiano Reggiano<br />
4 oz breadcrumbs<br />
the grated peel of 1 lemon<br />
1 Tbsp butter<br />
nutmeg<br />
salt and pepper<br />
4 qt chicken broth</p>
<p><strong>For Porcini Sauce:</strong><br />
10 oz porcini mushrooms<br />
1 oz butter<br />
1 clove of garlic<br />
4 tbsp of extra virgin olive oil<br />
1 cup chicken broth<br />
Parsley<br />
Thyme<br />
Salt and pepper</p>
<p><strong>Passatelli Preparation</strong><br />
Mix the eggs, grated lemon peel, butter, pinch of nutmeg and salt.  Mix in the flour, breadcrumbs and Parmigiano in that order.  Mix thoroughly until one achieves a homogeneous mixture.  Add more breadcrumbs to get  a more consistent mixture.Let sit  for about 1 hour covered by damp cloth.  Use a potato strainer (ricer) to make the passatelli, which should look like very thick spaghetti.</p>
<p><strong>Sauce preparation:</strong><br />
Sauté the sliced porcini in hot extra virgin olive oil and garlic. Add salt and pepper,, thyme, butter and chicken broth and finish cooking.</p>
<p><strong>Final Preparation:</strong><br />
Bring the chicken broth to a boil.  Add the passatelli and cook for a few minutes.  Drain and mix with sauce adding a bit of parsley and parmigiano.</p>

<p>Ramspeck Cabernet Sauvignon 2009, Merlot 2009, and Pinot Noir 2009</p>
<p>Selecting which Ramspeck Wine should be the wine of the week is very difficult for me to decide.  I personally enjoy all three wines equally.  I am very proud and honored to share these wines with friends.<br />
My first impression is the packaging of the bottles.  The coat of arms emblem is painted on the bottle.  Gerry Rowland, owner and wine maker of Rowland Cellars, traced his ancestral roots and found out that his own family made wines over 450 years ago with the label called “Ramspeck”.</p>

Like having several children, all three wines of Ramspeck are special and unique. The Ramspeck Cabernet Sauvignon 2009 is full body and structured wine from the Napa Valley.  The ripe fruit in this wine is both spicy and peppery to the pallet but is well balanced with soft tannins.<br />
For the technical people, wood aged in 50% new barrels of new oak and 50% of one and two year old wood of French and American Oak .  The blend is 76% Cabernet Sauvignon, 14% Petite Verdot, 7% Merlot and 3% Malbec.</p>
<p>The Ramspeck Merlot 2009 is from Napa Valley and has wonderful deep, rich flavors and is perfectly full bodied.  Your nose will be excited to the bouquet of dark chocolate, cherries and black plums.  It is a blend of 80% Merlot, 14% Petite Verdot and rounded off with 6% Cabernet Sauvignon.  A perfect wine for sipping with friends or a perfect companion with a prime rib dinner. </p>
<p>This Ramspeck Pinot Noir 2009 is born in the Napa Valley with an outstanding style and taste.  The bouquet makes me think of dark ripe berries with hints of spice and with a slight touch of aromas of freshly ground coffee beans. This rich full body wine has flavors of a mixture of ripe blackberry and raspberry with notes of spice and earthy tones.  This wine made with 100% French Oak.</p>

For much too long of a time, they have been associated with disgustingly sweet white zinfandels and before that wine coolers.  Fortunately, people are finally realizing that rosés can be very interesting wines with the complexity of the reds and delicacy and finesse of white wines.  Red wine derives its color, and lots of other important components, from the skins of the grapes.  After the grapes are picked they are crushed and then the mixture of juice and skins are placed in tanks where the fermentation process is carried out.  Depending on the type of wine and the characteristics desired, the fermentation process proceeds for a number of days, until all the sugar has been converted to alcohol.  In the traditional method of making rosés, the fermentation with the skins is much shorter, so that the beautiful pink color is obtained.  The juice is then left to ferment without skins to complete the process.</p>
<p>The Angelini Sangiovese Rosé is made in a slightly different way.  Our main wine is the Sangiovese Riserva.  We have only 7 acres of vineyards, so we make sure we get the best fruit for all of our products.  An old method to improve wines meant for prolonged aging is the “Salasso” method.  This is simply the removal of small amounts of juice during fermentation, thereby lowering the liquid portion and therefore increasing the concentration of skins.  Hopefully this will lead to more extractions of the important components and a bigger, richer wine.  This occurs after a few days of fermentation, so that the juice has obtained the pink color.  We then allow the fermentation to go to completion and we get a wonderfully full wine, with abundant cherry notes and long finish.  Seeing that the wine derives from our Sangiovese Riserva, it is a wine that can go with a large variety of dishes; from delicate fish to barbecued chicken.  It’s also great in the hot summer months because it is serve chilled.</p>
<p>Only 190 cases were made this year, so look for it soon and give rosés a try, you might become a convert.</p>

        <a href="http://www.blackbearwines.com/" title="Black Bear Wines and Spirits">Black Bear Wines and Spirits</a> is having a wine tasting and bottle signing of Ramspeck wines with the wine maker Gerry Rowland.   The three Ramspeck wines that are being tasted are: Pinot Noir 2009, Merlot 2009, and Cabernet Sauvignon 2009. </p>
<p>The tasting and signing of bottles will take place at Black Bear Wines and Spirits on Tuesday, May 1, 2012 from 6 PM to 8 PM.  There is no charge for the wine tasting or listening to Mr. Rowland speak about these great wines.</p>
