We can’t get enough garlic here!  A few weeks ago, we whipped up some Garlic Scape Pesto and it’s been on our minds (and in our bellies) ever since.

If you haven’t tried it before, it’s a perfect addition to crackers, pasta, or even as a spread on a pork tenderloin sandwich.

Here’s the recipe:

garlicscapesChop a bunch (handful, maybe ten) of garlic scapes – (take the blossom part off)

Put in food processor with handful of nuts (pine or walnuts), about 1/4 – 1/2 cup of grated parmesan cheese and blend. Add olive oil and salt to taste and continue to blend until smooth. You can add basil or parsley to cut back on the strength of the  garlic flavor ( we usually omit this step).

This will last a couple of weeks in the refrigerator and up to one year in the freezer.  Delizioso!
